Le début du whisky en 1505 la Guilde des barbiers et chirurgiens s'est vu octroyer la distillation de l'eau de vie « Aqua Vitae » à Édimbourg par Jacques IV d'Écosse. Quelle que soit la ville d'Édimbourg où vous vous trouvez, il y aurait eu quelqu'un qui aurait distillé des spiritueux légalement ou illégalement. Certains des noms qui seront encore connus aujourd'hui

Edimbourg a une longue histoire avec la distillation et le brassage. Une fois que la plus grande brasserie d'Europe se trouvait à Fountainbridge et Leith avait des entrepôts de whisky partout. Tout est parti maintenant. Il existe encore un certain nombre de distilleries et de micro-brasseries à Edimbourg et bientôt Édimbourg aura l'expérience Johnnie Walker dans le centre d'accueil phare de Princes Street Diageo. Holyrood Distillery is the first distillery to produce a single malt whisky in over 100 years.

George IV on his visit to Scotland and drank
the famous malt (illegal at that time).

Aberlour Distillery was first founded by the Grants in 1825 but in 1833 the built their own distillery in Rothes. Along came James Fleming, founding the present distillery in 1879.
